The lovely and very talented Renae from @the_wholefood_nutritionist has been experimenting with our Vanilla & Coconut Protein Power Ball Mixture to make it her own. She has developed a simple but delicious alternative that essentially swaps the dates with apricots. There is also the option of adding a little honey or rice malt syrup if the apricots taste a little tart for your tastebuds.

I made this ‘Cheesecake’ a few days ago and it was so damn tasty I have to share the recipe with you. There are plenty of ‘Raw Cheesecake’ recipes out there so I have taken bits and pieces from many. They all generally use a ‘filling’ of cashews, blended with fruits and a crunchy base, again of nuts, with some sort of natural sweetener. I have used a Funch product (of course), as it gives a great hit of protein and along with the nuts and coconut will be surprisingly filling, so you only need a small amount. Served with Coconut Yoghurt, it’s heaven.

We are almost there…through the depths of Winter and only weeks away from Spring. Evenings are staying lighter just that little bit longer (OK maybe only 5 minutes, but we'll take it). A good time to start thinking about dishes that are a little lighter, make the most of the beautiful bright fresh ingredients in season and can be prepared quickly and easily whilst the kids start to stay outside that little bit longer and that can easily be served Al Fresco as the weather gets a little warmer.

Made a sneaky little brownie-style slice with Funch Protein Power Ball Mix this afternoon. Kids came home from a day out visiting grandparents and devoured a few pieces, as did hubby. Will be popping in the kids lunch boxes tomorrow - for an awesome energy boosting nutrient rich snack, offering a lot more than your traditional style brownie. Pretty good with a cuppa too.

At the start of this year I discovered the joy of juicing. I really enjoy juices and certainly appreciate the health benefits that can be gained from including our home-made fruit and vegetable juices as part of our families overall diet.
